DESCRIPTION: Long before the West arrived in the islands now known as the P
 hilippines and ruled with the cross and the sword\, indigenous spiritual t
 raditions made up the basis for our worldview. Filipinos continue to pract
 ice these traditions even within the Catholic framework. Join us with visi
 ting Chef Rob Menor of Adoboloko and Papa Urb's Grill in Stockton\, Califo
 rnia\, to celebrate the culinary and mystic traditions of Ilocos\, the nor
 thernmost region of the Philippines. "Atang" is the Ilocano word for a foo
 d offering to the spirit world.  \n\n Chef Rob will present a five-course 
 menu. The meal begins with kilawin baka\, a beef carpaccio cured with nati
 ve citrus. Pinakbet is an Ilocano staple – a vegetable-forward dish saut
 eed with bagoong\, the umami-packed fermented shrimp paste. The third cour
 se is pinapaitan\, a goat and beef offal dish. Dinengdeng is a savory\, ve
 getable stew. Our meal concludes with tupig\, a sweet\, sticky rice cooked
  in banana leaves. \n\n Tickets are available now for $65 or $85 (latter i
 ncludes alcohol pairing). \n\n Returning to Chicago\, Chef Rob Menor of Pa
 pa Urb’s Grill in Stockton\, California\, leads the Kultura Festival kit
 chen. Since Chef Rob participated in the 2014 Savor Filipino food festival
  in San Francisco and opened the second location for Papa Urb’s Grill\, 
 he has collaborated on Filipino pop­-ups with chefs in California and Min
 nesota. \n\n A portion of dinner will benefit Little Manila Foundation in 
 Stockton\, CA  \n\n Who is Little Manila Foundation? \n\n The Little Manil
 a Foundation advocates for the historic preservation of the Little Manila 
 Historic Site in Stockton\, California and provides education and leadersh
 ip to revitalize our Filipina/o American community. \n
