 ature Chef Joaquin Soler of smalls. as their guest chef. \n\n Through a se
 ries of dinners and guest chef collaborations\, Amy Besa and Romy Dorotan 
 of Purple Yam Restaurant are taking their Philippine-based chefs on a tour
  to Seattle\, Philadelphia\, Chicago\, Toronto and New York\, where Besa a
 nd Dorotan opened Cendrillon in 1995\, and Purple Yam in 2009. \n\n In eac
 h city\, the Purple Yam team will collaborate with local chefs to bring a 
 taste of indigenous Philippine flavors to new audiences - through special 
 dinners\, panel discussions\, food demos\, tastings and industry events. \
 n\n Sponsored by the Cultural Diplomacy Unit of the Philippine Department 
 of Foreign Affairs\, the tour is part of a global series of events whose g
 oal is to reintroduce Philippine food products that Besa describes as larg
 ely “unknown\, ignored and undervalued”. \n
